½ cuppear syrup
Prickly
3 Tbsplime juice
Freshly squeezed, crucial to cut the intense sweetness
1shallot
small, finely minced
1 cloveGarlic
smashed or grated
1 TbspApple cider vinegar
or red wine vinegar, adds a sharp, tangy contrast
½ tspGround cumin
or a split sprig of fresh rosemary
kosher salt
cracked black pepper
bourbon
Optional, or a pinch of chipotle powder if you want to introduce a smoky, oaky complexity to the glaze
Instructions
Step 1
Sauté Aromatics for Glaze: Heat a small splash of oil in a saucepan over medium heat. Add the minced shallot and garlic, sautéing for 2-3 minutes until soft and fragrant without letting them brown.
Step 2
3 Simmer the Glaze: Pour in the prickly pear syrup, lime juice, vinegar, bourbon, cumin, salt, and pepper. Bring to a gentle simmer, turn the heat to low, and let it reduce for 5-7 minutes until it slightly thickens and coats the back of a spoon.
Step 3
4 Strain and Finish Glaze: Remove from heat. Strain through a fine-mesh sieve to remove the shallot and garlic pieces if a perfectly smooth finish is desired. Stir in the cold pat of butter until melted and glossy. Set aside.
