Instructions
1. Prep & Steam the Ingredients:
Step 1
Peel the cassava and plantains, ensuring all plantain skin and the inner fibrous cord of the cassava are removed.
Step 2
Cut everything into uniform, smaller pieces.
Step 3
Place the metal trivet into your Instant Pot liner and add 2 cups of water.
Step 4
Place the cassava and plantain chunks on top of the trivet.
2. Pressure Cook:
Step 5
• Secure the lid and ensure the pressure valve is set to Sealing.
Step 6
• Select Pressure Cook (or Manual) and set it to High Pressure for 25 minutes.
Step 7
• When the cooking cycle is complete, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully quick-release any remaining steam.
3. Blend & Knead:

• Remove the cooked cassava and plantains and place them into a high-powered blender or food processor. [1]

• Add about \(\frac{1}{4}\) cup of the hot steaming liquid from the Instant Pot and blend until completely smooth and stretchy. (If your blender struggles, you can do this in batches). [1, 2]

• Transfer the smooth puree into a non-stick pot on the stove over medium-low heat.
Step 11
• Vigorously stir and mash the mixture with a strong wooden spoon or spatula for about 5 to 7 minutes until the fufu thickens, pulls away from the sides, and takes on a glossy appearance. [1, 2, 3, 4]
4. Shape & Serve:

• Wet your hands or lightly oil your palms to prevent sticking.
Step 13
• Scoop out portions of the fufu and roll them into traditional balls. [1, 2, 3, 4]
