Healthy Hoe Mashed Potstoes and Gravy
3 pounds russet potatoes
2 boxes chicken bone broth
1 tsp salt
255g or 1ish cups low fat cottage cheese
1/2 cup nonfat Greek yogurt
1/4c bone broth
Garlic powder
2 tbsp butter (optional)
1.5 tbsp butter
2 tbsp all purpose flour
Drained bone broth from cooked potatoes
2 tsp soy sauce or tamari
Black pepper to taste
Makes 6 servings

Potatoes
Step 1
Dice potatoes
Step 2
Add diced potatoes, broth, and salt to pot. Bring to rolling boil, then turn down to simmer until tender
Step 3
Blend together cottage cheese, greek yogurt, garlic powder, and bone broth.
Step 4
Drain potatoes INTO A BOWL! Do NOT discard!!! Save for gravy. Return potatoes to pot.
Step 5
Add dairy mixture into potatoes, mash until mixed well. Add butter and mix again. Add additional bone broth if too thick.
Step 6
Melt butter in pan. Add flour and make a roux.
Step 7
Add bone broth from potatoes and whisk until smooth. Add soy sacuce.
