Instructions

Step 1
To make the date mixture: If using whole dates, process them in a food processor until they form a paste. You can process the walnuts and cocoa along with the dates. Mix until you have a smooth, uniform dough-like mixture.
Step 2
If using vacuum-packed date paste, simply knead/mix the cocoa and chopped walnuts into the date paste until evenly distributed.
Step 3
Shape: Divide the mixture into equal balls, approximately 30 g each.
Step 4
Coat with sesame seeds by rolling each ball thoroughly in the toasted sesame seeds.
Step 5
Place ball inside a small round cookie cutter.
Step 6
Create a centre by using the handle of a wooden spoon, for example, and make a deep indentation in the center of each ball.
Step 7
Add peanut butter, filling each indentation with peanut butter, about 2/3 of the way to the top.
Step 8
Top with chocolate.
Step 9
Chop the dark chocolate and melt it either: - in the microwave in short bursts - or over a bain-marie/double boiler.
Step 10
Pour a thin layer of melted chocolate over the peanut butter.
Step 11
Garnish: Sprinkle with chopped pistachios or chopped nuts.
Step 12
Chill and refrigerate until the chocolate has completely set.
Step 13
One culinary note: these could be very good with a tiny amount of flaky sea salt on top of the chocolate. That would cut the sweetness of the dates and make the peanut butter/chocolate flavor pop.
