Instructions

Step 1
Combine the Liquids: Pour the 1 cup of water, 1/3 cup of half-and-half, and ¼ teaspoon of salt into a medium saucepan. Stir briefly to distribute the salt.
Step 2
Bring to a Controlled Simmer: Place the saucepan over Medium heat. Do not walk away from the stove. Stir occasionally to prevent the dairy fats from sticking to the bottom of the pan. Watch closely for steam to rise and tiny bubbles to fringe the edge of the liquid.
Step 3
Catch the Bubble and Pull: The exact second the center of the liquid breaks into a gentle, rolling simmer, immediately remove the saucepan completely off the hot burner. Do not let it boil vigorously, or the dairy will foam up and boil over.
Step 4
Infuse the Grains: Instantly dump the 1 ½ cups of dry instant rice into the hot liquid. Give it one swift rake with a fork to ensure every single grain is fully submerged, then immediately snap a tight-fitting lid onto the saucepan.
Step 5
The Steaming Rest: Let the covered pan sit completely undisturbed on a cool surface for 5 minutes. The trapped steam will hydrate the rice perfectly.
Step 6
Fluff and Cool: Take off the lid and gently fluff the rice with a fork to separate the plumped grains. Spread the cooked rice out across a large plate or a baking sheet for 5 minutes to let the surface moisture evaporate. **Why this is important for your pudding** Letting the rice cool on a flat surface for 5 minutes locks in the structural integrity of the grains. Because they are hydrated with a light touch of dairy but not weighed down by heavy fats, they act like a sponge when folded into your Instant Pot custard base, soaking up flavor without breaking apart.
