Instructions
Step 1
Phase 1: Baking the Two-Layer Cake Base
1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
2. Whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt together in a large bowl.
3. Add eggs, milk, and vegetable oil to the dry ingredients, then whisk for 2 minutes until smooth.
4. Pour boiling water (or hot coffee) into the batter and stir gently by hand until combined.
5. Divide batter evenly between the two prepared pans.
6. Bake for 30 to 35 minutes until a toothpick inserted into the center comes out clean.
7. Cool completely in the pans for 10 minutes, then transfer to a wire rack.
8. Trim and level the tops of the cold cakes with a knife, saving all trimmed scraps in a bowl for the cake balls.
Step 2
Phase 2: Decorating the Whole Cake
1. Warm the honey in a small bowl in the microwave for 5 to 10 seconds until runny.
2. Brush honey in a thin, even layer over the top and all sides of the stacked two-layer cake.
3. Press 1½ cups of shredded coconut gently flat against the sticky honey layer.
4. Patch bare spots by drizzling a tiny bit more warm honey and pressing more coconut over them.
5. Refrigerate the cake for 15 to 20 minutes to set the honey glaze and lock the coconut flakes in place.
Step 3
Phase 3: Preparing the Fudgy Cake Balls
1. Crumble the saved cake scraps with clean fingers in a bowl until they turn into fine crumbs.
2. Add 1 tablespoon of softened butter to the crumbs.
3. Knead the mixture firmly by hand like cookie dough until it holds its shape like playdough.
4. Fix texture if the dough feels too greasy by mashing in a few tablespoons of crushed dry biscuits or extra coconut.
5. Roll the dough tightly between your palms into walnut-sized balls and place them on a plate.
6. Freeze the cake balls for exactly 30 minutes to firm up the butter.
Step 4
Phase 4: Dipping and Finishing the Cake Balls
1. Melt the extra chocolate in a microwave-safe bowl in 20-to-30-second bursts, stirring each time until completely smooth.
2. Set up your station by putting the remaining ½ cup of dry shredded coconut in a bowl next to the melted chocolate.
3. Dip one frozen ball into the melted chocolate using a fork, rolling it until covered.
4. Tap the fork gently against the rim of the bowl to let excess chocolate drip off.
5. Drop the wet ball immediately into the shredded coconut bowl and roll gently to coat.
6. Place the finished balls on a tray and refrigerate for 5 minutes until the chocolate shell hardens completely.
