Instructions
Step 1
Prepare the ingredients.
Step 2
Wash and slice the Honeycrisp apples and blood oranges. Lightly crush the cardamom pods to release their aroma. Split the vanilla beans lengthwise to expose the seeds.
Step 3
Simmer the cider.
Step 4
Pour 1.5 gallons of Honeycrisp apple cider into a large pot. Add the sliced apples, 6 cinnamon sticks, 4 star anise, 13 cardamom pods, 13 cloves, and 1 split vanilla bean. Bring to a gentle simmer over medium-low heat for approximately 30 minutes.
Step 5
Add the blood oranges.
Step 6
After 30 minutes, add the sliced blood oranges, including their peels. Continue simmering gently for another 15 minutes, allowing the citrus flavor to develop. Taste periodically to ensure the spices and orange peels don't become overpowering.
Step 7
Bloom the saffron.
Step 8
Place approximately 24 saffron threads over a small amount of ice in a separate container. Allow the ice to melt naturally, releasing the saffron's golden color and delicate floral aroma.
Step 9
Strain the cider.
Step 10
Once the apple, orange, and spice flavors are balanced, remove the pot from the heat. Strain through a fine-mesh strainer, removing the fruit, peels, and whole spices.
Step 11
Enhance the vanilla.
Step 12
Add a second split vanilla bean to the hot, strained cider and allow it to steep gently for approximately 20–30 minutes, tasting for the desired vanilla flavor.
Step 13
Add the orange juice and saffron.
Step 14
Stir in 24 fl oz of freshly squeezed orange juice and the saffron infusion, including all the infused liquid. Mix thoroughly and allow the flavors to combine.
Step 15
Refrigerate overnight.
Step 16
Cool the cider promptly using an ice bath or smaller containers, then refrigerate covered overnight. This allows the apple, citrus, spices, vanilla, and saffron flavors to meld together.
Step 17
Reheat and finish.
Step 18
The following morning, gently reheat the cider until thoroughly hot. Add the third split vanilla bean while warming, allowing it to infuse additional aroma. Remove the bean once the desired flavor is achieved. Avoid prolonged boiling.
Step 19
Serve warm.
Step 20
Pour into mugs and optionally garnish with a fresh blood orange slice or cinnamon stick.
