Instructions

Step 1
Drain all pineapple juice into measuring cup and add water to make 2 cups (set pineapple aside).
Step 2
Bring pineapple water to boil, then dissolve Jell-O and marshmallows in liquid.
Step 3
Pour in glass dish and refrigerate for 40 minutes (until it starts to set).
Step 4
When Jell-O is almost set, whip cream (not on high) until it stands in peaks. Mix cottage cheese and crushed pineapple into Jell-O mixture, then gently fold in whipped cream.
Step 5
Refrigerate for at least an hour.
