Instructions

Step 1
The egg whites will remain raw, so buy pasteurized eggs, if you are worried about Salmonella.
Step 2
Whisk egg white until stiff then start adding sugar slowly; continue beating until egg whites are shiny & stiff again.
Step 3
Add almost all strawberries, reserving few for decorating. Continue whisking until strawberries are incorporated & almost completely crushed.
Step 4
Distribute strawberry foam into dessert bowls or cups; top with reserved strawberries. Decorate with mint or balm leaves, if desired.
Step 5
Serve immediately.
