Potato Lefse

11/15/25: Rolled with CnA. Worked well. Used ruler to portion each 1/4 recipe log. Then weighed to 3.10-3.15 oz. For 5 # gluten free Add 1/3 cup melted avocado shortening plus 1/4 cup of C’s cream (see Vegan Whipped Cream omitting powdered sugar) Store covered with a towel in the fridge. 11/06/25: Idaho potatoes from WalMart. Prepped to roll with Lois. Add 1 T salt to water. Champagne bubbles. Cooled just until able to handle then riced with MJ’s machine. Used metal bowls - one per 5#. Mixed in that bowl in the morning. 11/23/24: Rolled with CnA again. Put potatoes in tin foil pans with paper towel and then a kitchen towel over after cooled on countertop. Added 1 cup (plus a bit more) to each quarter. Could have used more. Try 1 1/4 cup. Made rounds 2.95 oz each. This makes 48 rounds. Did 20# and rolled in 4 hours. Courtney manned the griddles. Plug one in by kitchen light. Used Crisco and plant based whipping cream again (although C is now not able to have canola oil….look for another alternative). Taste tested with Adeline recipe. Very similar. 11/10/23: rolled with Courtney and her mom, Ann. Used 3/4 c butter favored Frisco and 1/2 c plant based whipping cream (borrowed Mary Joy’s Oster with grinder attachment!) 11/22: excellent with butter flavored Crisco!! Instructions

Step 1
Add 1 1/2 cups flour to 1/4 of the potatoes at a time (mix with hands). You will do this 4 times.
Step 2
Make a log 12" long. Slice into 1" slices.
Step 3
Put most back in the fridge to keep cold.
Step 4
Form into round patties then roll out thin, using cloth covered pastry board and more flour (sparingly).
Step 5
Bake on hot (500*) Lefse grill. Bake until light brown, turning once (don't over cook).
Step 6
Place cooked Lefse between cotton and terry cloth towels - lefse is folded in half. Let’s cool rest of day.
Step 7
Fold again. Put 6 at a time into a quart ziploc. Freeze.
