Instructions
Step 1
1. Trim cucumbers and cut into 4 inch lengths
Step 2
2. Use a vegetable peeler to cut 18 strips of cucumber peel
Step 3
3. Press 3 strips each to the insides of six, 3oz freezer pop molds
Step 4
4. Remove any remaining peel, then seed and chop the cucumbers to get six cups, reserve any remaining cucumber for another use
Step 5
5. Combine the chopped cucumber, lemon juice, jalapeno, honey and salt and blender. Puree
Step 6
6. Pour the mixture through a fine mesh sieve set over a medium bowl, pressing on the solids to yield as much juice as possible. Discard solids
Step 7
7. Divide the mixture among the prepared molds and insert sticks
Step 8
8. Freeze until solid, about 6 hours
