Line 12 muffin tin cups with paper liners

Preheat oven

Mix flour, baking powder, baking soda and salt in a medium bowl and set aside.

Beat margarine and sugar in a large bowl with an electric mixer on medium speed until they are mixed together and sugar is puffy.

Add egg to margarine and sugar mixture and thoroughly beat with the electric mixer.
Step 6
Add one half of the dry ingredients (flour, etc) to the moist ingredients (margarine, sugar, egg) and stir by hand.

Stir in by hand one half of the yogurt.

Add the remaining dry ingredients and stir by hand.

Add the remaining yogurt and stir by hand.

Add various ingredients by hand. If you are adding banana, add banana first before the chocolate chips/blueberries.

Using a 1/3 or 1/4 cup dry measuring cup; divide the batter evenly among the muffin tins. The muffin cups will be almost full.

Bake for 16-20 minutes or until tops are golden brown. Test using a toothpick

Set muffin tins on cooling rack for 5 minutes before eating
For Surprise Muffins

Fill muffin cups about half full using 1/4 cup measuring cup.
Step 15
Spoon 1 rounded teaspoon of strawberry jam onto the batter in each cup.
Step 16
Top with enough batter to almost fill cups.
