Tarragon Simple Syrup

Tarragon flavored drinks were and are very popular in Soviet and post-Soviet countries. They are not made with natural ingredients anymore and way too sweet, but everybody can recognize the flavor. The most common name for tarragon-flavored carbonated soft drinks is Tarhun. Simple syrup is a sugar solution used by bartenders to make cocktails. The ratio of sugar to water is 1:1 to 2:1 by volume. Granulated sugar is stirred into hot water until it is dissolved. To make flavored syrup add herbs, spices, or any other aromatics during the cooking process. Very simple to make! This recipe makes 3 cups of syrup. Store it in a fridge and use it for lemonades and cocktails. To make lemonade, mix 1/4 cup of tarragon syrup with 1 quart of your favorite sparkling water and ice. Add 1-2 tbsp of tarragon flavored simple syrup to your gin-n-tonic, you’ll love it!

Instructions

Step 1
Dip tarragon bunches in simmering water for 2 seconds and ice shock to stop cooking. Finely chop tarragon, leaves and stems.
Step 2
Mix water and sugar, bring to boiling, turn the heat off. That's your simple syrup.
Step 3
Squeeze key lime juice into the simple syrup and add chopped tarragon. Cover with lid and let it steep for 6-8 hours.
Step 4
Strain solution. Add 1 drop of green coloring. Bottle and refrigerate.
