Instructions

Step 1
Mix the juniper berries, dried fruit, spices, bitter almond peel and citric acid in a large pan.
Step 2
Stir in the vanilla pod and seeds and 1 litre of the water and bring to the boil.
Step 3
Simmer for about 20 minutes.
Step 4
Add the sugar and leave to dissolve in the liquid.
Step 5
Remove from the heat and add the remaining 5 litres of water.
Step 6
Cover with cling film and leave to steep for about 12 hours.
Step 7
Strain through a fine sieve.
Step 8
Stir in the soda culture and cover with muslin.
Step 9
Leave to stand at room temperature for 3-5 days.
Step 10
Stir 2-3 times a day.
Step 11
Check the taste after 3 days.
Step 12
The longer it stands, the drier it will be, but don't let it over-ferment - it should still smell fresh.
Step 13
If you hear a fizzing sound when you stir it, it's time to bottle.
Step 14
Strain and bottle into sterilised PET or glass bottles leaving 5cm air space.
Step 15
Leave the soda at room temperature for 1-2 days until carbonated.
Step 16
Transfer to the fridge and store for up to 4 weeks.
