Instructions
Step 1
Blanch chicken bones for 1-2 minutes. Water should cover bones by 1 inch.
Step 2
Clean pot and chicken.
Step 3
Add 7.5L of clean water to pot with chicken bones. Bring to boil for 30 minutes and skim off excess fat on surface. Meanwhile, roast onions and ginger.
Step 4
Bring down to simmer. Add roast onions (diced in half), roast ginger (sliced), sugar, some salt and dried shrimp.
Step 5
Simmer for 2-3 hours.
