No-Fuss No-Bake Cookies

Funny story: I ruined the first batch of no bake cookies I ever attempted to make. I completely missed the “bring to boil” step. The end product was a flattened glob of chocolate oats that never hardened properly. As a newlywed housewife, I was completely humiliated that I couldn’t successfully make one of the simplest of treats. I have since perfected the art of making the no bake cookie.
A dry, over-hardened no bake cookie sucks. In order to avoid this, a good ratio of peanut butter, cocoa, sugar, and vanilla is needed. This easy recipe utilizes all of these ingredients to make a moist and flavor-balanced cookie.

Instructions
Step 1
Line a large baking sheet with parchment paper.
Step 2
Melt sugar, butter, cocoa powder, and milk in medium saucepan.
Step 3
Bring mixture to a rolling boil. Pre-measure peanut butter and oats; Have vanilla extract and a teaspoon handy. You want these ingredients ready to be added after the next step.
Step 4
Allow mixture to boil for 60 seconds without stirring.
Step 5
Add peanut butter and mix until completely melted.
Step 6
Add vanilla and combine.
Step 7
Stir in quick oats.
Step 8
Scoop balls on to your lined baking sheet. (I like to use my 1/8th cup measuring utensil make a uniform sized cookie.)
Step 9
Allow cookies to set before eating. (I like to put mine in the refrigerator to expedite the process.)
