Instructions

Step 1
In a food processor, pulse the grated carrots and dates until finely chopped and well combined.
Step 2
Add the almond flour, shredded coconut, walnuts, cinnamon, ginger, nutmeg, and salt to the food processor.
Step 3
Pulse the mixture until well combined and sticky.
Step 4
Scoop the mixture into tablespoon-sized balls and roll between your palms to shape.
Step 5
Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
Step 6
Once set, the energy balls can be stored in an airtight container in the refrigerator for up to a week.
