Ingredients
4 servings
4sweet potatoes
medium, washed and diced
3 TbspWater
divided
1 lbground beef
2garlic cloves
pressed or chopped
1 ½ tspsouthwest seasoning
¼ tsppepper
1 Tbspoil
1jalapeno
chopped
10 ozvegetables
frozen, non-flavored peppers, beans, broccoli usually
8 ozshredded mesican-blend cheese
3roma tomatoes
chopped
1avocado
diced
4 Tbspfresh cilantro
chopped
Instructions
Step 1
Place potatoes in a microwave container with a loose fitting lid, or a lid with steamer holes. Add 1 Tbsp of water and cover with lid. Microwave 4 minutes or until soft but not mushy.
Step 2
Pan-fry ground beef until browned, crumbling as it cooks. Drain grease and rinse beef in hot water.
Step 3
Add oil and frozen vegetables and jalapeno to the center of the hot pan and cook until heated through.
Step 4
Push vegetables to the outside of the pan. Add back the beef to the center. Add remaining water and seasonings to the beef. Stir to distribute seasoning. Add potatoes back to pan.
Step 5
Once everything is heated stir in cheese just to melt.
Step 6
Top each serving with tomatoes, avocado, and cilantro.
