Homemade Peanut Brittle

Instructions

Step 1
Chop/crush and lightly toast your nuts. This step is optional but definitely adds to the flavour. Lay a silicone mat or sheet of grease paper on a flat heat resistant surface.
Step 2
Combine the salt and baking soda and set aside nearby. Combine sugar, water, and butter if using in a heavy saucepan and set over medium heat.
Step 3
Stir with a rubber spatula to dissolve the sugar (and butter). Once it begin and to boil, swirl the pot around occasionally to promote even cooking.
Step 4
When the mixture is a deep amber colour, remove the pot from heat, quickly add the baking soda and salt and stir. Add the nuts and stir until evenly distributed.
Step 5
Quickly pour the hot peanut mixture onto your silicone mat or grease papered surface. Spread evenly with an oiled knife or spoon and allow to cool for about 5-8 minutes.
Step 6
Break the brittle apart with the back of a knife and serve. Store extra in an air tight container.
