Pineapple Upside Down Cake

Ingredients

Cake
1 ½ cupscake flour
1 teaspoonbaking powder
¼ teaspoonbaking soda
½ teaspoonsalt
6 Tablespoonsbutter
room temperature
¾ cupgranulated sugar
2egg whites
large, room temperature
1 teaspoonpure vanilla extract
⅓ cupsour cream
room temperature
⅓ cupwhole milk
room temperature
Instructions
Step 1
Preheat oven to 350°F
Step 2
To make the topping: Pour 1/4 cup melted butter into an ungreased 9 inch pie dish. Sprinkle brown sugar evenly over butter. Blot any excess liquid off the fruit (and cherries) with a paper towel. Align the pineapple slices on top of the brown sugar. Place the cherries in the open spots.
Step 3
Mix the remaining ingredients in a large bowl and then pour over the topping.
Step 4
Bake for 43-48 minutes or until top is golden brown.
Step 5
Remove from oven and allow to cool on a wire rack for 20 minutes. Flip the pie dish over onto cake stand or cooling plate. Do not wait longer than 20 minutes to do this or the toppings may stick to the pie dish.
