Cranberries in Red Wine
Makes about 3 cups.
A good (not great wine) is imperative to the end result of this stimulating turkey partner.

Instructions
Step 1
Pick over the cranberries, removing stems and any shriveled berries. Rinse under cold running water; drain.
Step 2
In a noncorrosive heavy medium saucepan, combine sugar and wine; heat to boiling, stirring constantly, over moderate heat. Stir in the cranberries, cinnamon stick and orange rind. Increase the heat to high and return the mixture to boiling, stirring constantly. Reduce the heat to medium-low; simmer, partially covered, stirring occasionally until the cranberries burst, 10 to 15 minutes.
Step 3
Remove from the heat and discard the cinnamon stick. Lift out the piece of orange rind; let cool slightly. Cut it into thin julienne, then stir back into the cranberry mixture. Let cool to room temperature.
