Cut the stems off and wash the beets

Cover the beets with boiling water and cook until soft

Pull the skins off and cut into slices

Combine water, vinegar, sugar, salt, cloves, cinnamon, ginger and pepper. Heat in a stainless steel or enamel pot until boiling.

Add beet slices, reduce heat and cover. Simmer for 20 min.
