Add in almond flour, powdered sugar, and cocoa powder (or whatever other flavoring you choose) and ***GENTLY*** fold all ingredients together, DO NOT DEFLATE EGG WHITES

Once fully mixed take two normal sized spoons and dollop on a parchment-lined baking tray

Take two cookies that are of equal size and spread on some ganache in between, don’t add too much cream!
