Birria Lamb Tacos

Instructions

Step 1
Score the lamb and season with the salt and sear/char on a high heat briefly on all sides
Step 2
Char all the veg in a dry pan or on the grill til starting to blacken
Step 3
Add all the veg and broth/spices and Chillies to a deep oven dish big enough for the lamb leg
Step 4
Rest the lamb leg on top of the veg
Step 5
Brush a large sheet of tinfoil with oil before laying over the lamb completely covering the dish
Step 6
Bake the lamb at 110C for 10 hours or 140C for 6 hours until completely tender and falling apart
Step 7
Remove the lamb from the bone and shred it up. Set the bone aside, this can be used for presentation later

Pour the leftover liquid and veg from the tray into a blender and let blend for a minute til smooth, then pour this back into the tray

The Tacos

Finely dice the onion and coriander and mix, and grate the cheese
Step 10
Dip the tortillas in the broth, shake off the excess, then lay onto a pan/flat top on medium heat
Step 11
Add the cheese, coriander and onion, and a bit of the lamb onto each tortilla. Once the tortilla has started to brown and get dark spots, fold it over the filling to make tacos. Cook for a further minute or so per side to glue it all together and serve with wedges of lime.
Step 12
For Birria mayo, just mix equal parts mayo and leftover broth, and squeeze some lime in, this makes a great dipping sauce
