Instructions

Step 1
Remove and discard the seeds from your dried chili then soak in

hot water for about 15 minutes, then remove them from the soaked liquid
Step 3
In a blender, combine the softened chilis with onion, garlic, tomatoes, oregano, chipotle pepper. Puree the mixture until smooth, adding a little soaked liquid if needed.
Step 4
Season the beef with steak seasoning and in your pressure cooker, sear the meat on both side with a little oil until golden.
Step 5
Add the chili tomato mixture, cinnamon, cumin, clove, bay leaves a cinnamon, bouillon, salt to taste.
Step 6
Taste and adjust seasoning

Pressure cook the meat for about an hour until softened and easily shredable
Step 8
Remove the meat from the braising liquid and shred the meat when cool enough to handle then set aside.
Step 9
Reduce the braising liquid to your desire thickness.
Step 10
Dip the tortillas into the sauce then place it on a hot griddle or oily pan, fry the tortilla slowly, then add cheese and meat. Flip the tortilla to cover the filling and cook on both side until crispy.
Step 11
To serve, open the cooked tortilla and garnish with dice onion, cilantro and lime.
Step 12
Serve any extra sauce in a small bowl for dipping.
Step 13
Feel free to assemble to your desire. Sometimes I will cook the tortilla on the stove with all topping but the lime.
