Step 1
Preheat oven to 180°C or 365°F (160°C or 320°F fan forced) and prepare a muffin tray with muffin cases

Step 2
Using a hand mixer or a stand mixer, whisk together the eggs and the sweetener (batter amount not icing) for no less than 15 minutes. The mixture needs to be light and fluffy.
Step 3
Add vanilla and sift in flour. Fold mixture till combined.
Step 4
Pour batter into 6 cupcake liners and bake for 15 minutes, or until toothpick comes out clean when inserted.
Step 5
Leave cupcakes to cool.
Step 6
Once completely cool poke a hole in the cupcakes and add melted biscoff (~3g in each) and add icing on top.
Step 7
If desired drizzle with some remaining biscoff.
