Instructions
Step 1
Sieve flour, yeast and sugar into mixer.
Step 2
Mix in low speed til incorporated.
Step 3
In minimum speed, gradually put in eggs one by one. Increase the speed to combine towards the end.
Step 4
Low speed, put in margarine and mix.
Step 5
Mix the milk and water together and gradually put mix it in.
Step 6
Mix batter in high speed for 10 minutes until the dough is smooth and heavy (not sticky).
Step 7
Proof for 20 minutes, or until doubled in size and dough turns light. Do not overproof!!!
Step 8
Prepare cheese by grating it. (cheddar)
Step 9
Brush baking tray with margarine.
Step 10
Shape the dough into 45-50 grams of balls.
Step 11
Lightly press the ball until slightly flat, press the edges and put in palm. Be careful not to press the middle part too flat, the edges should be flatter than the middle.
Step 12
Put 2-3tsp of either cheese or chocolate (or both) in the middle of the dough and shape like dumpling. For plain bread, you can just bake it after egg wash or you can press flat, then fold and cut the skin so it's pretty. Seal the edges by pinching and put on palm. Shape into ball by lightly folding the sides twice. (mark cheese bread with some cheese on top and chocolate with chocolate)
Step 13
Put the balls into greased tray, leaving some space in between and proof until they doubled in size.
Step 14
Brush the dough with egg wash (egg yolk + 1 tsp of milk).
Step 15
Bake in 180C for 12 - 15 minutes. (Middle rack, bottom heat for 10 minutes; shift to bottom rack, upper heat for 5 minutes)
