Instructions
Step 1
Preheat oven to 300 degrees F.
Step 2
Combine oats, cinnamon, coconut, almonds, chia seeds and pumpkin seeds in a large bowl.
Step 3
Melt coconut oil in microwave, about 30 seconds.
Step 4
Combine coconut oil, brown sugar, vanilla and syrup in a second medium bowl.
Step 5
Pour liquid over oats mixture and stir to cover. Spread mixture flat on a baking sheet. Bake for 20-25 minutes.
Step 6
Stir with spatula and then bake for another 20 minutes. (45 minutes total).
Step 7
Let cool, then mix in dried cranberries.
Step 8
Notes: You can substitute walnuts, pecans, or hazelnuts for almonds. Substitute raisins for cranberries if desired.
Step 9
Serving size is 1/4 cup.
