Instructions
Step 1
Preheat oven to 375°. Prepare sheet pan with parchment paper & spray paper with cooking spray.
Step 2
Chop broccoli into bite size pieces. Spread in a single layer on sheet pan, leaving room for fish. Roast 20 minutes and turn.
Step 3
After the broccoli has roasted 20 minutes, pat fish dry with a paper towel. Rub with olive oil, sprinkle both sides with dill and salt. Drizzle the lemon juice over filet.
Step 4
Place fish on sheet pan with broccoli and top with piece of butter. Bake 10-15 min or until fish flakes easily with a fork.
Step 5
Slice cucumber into rounds or pieces. Sprinkle both broccoli and cucumber with thyme and serve.
