Instructions

Broccoli

Step 1
Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper or foil.
Step 2
While the oven warms up, break a head of broccoli into evenly sized florets. Toss the broccoli florets with olive oil and season with salt and pepper. Spread them on the baking sheet in a single layer.
Step 3
Put the sheet pan in the hot oven and bake for 15 to 22 minutes, until the florets are browned and crisp around the edges.

Burgers

Step 4
Using a cast iron skillet set your stovetop to medium-high heat. Let it heat up for a minute, until it is very hot.
Step 5
Brush the skillet with vegetable oil.
Step 6
Take 1/4 pound of ground beef and loosely shape it into a ball. Do NOT pack. Place the ball of meat on the skillet. Work in batches; I can fit 2 at a time on my skillet.
Step 7
Smash the burger with a metal spatula. You want your 1/4 pound burger to be about 4 inches across.
Step 8
Season with a generous amount of salt and pepper.
Step 9
Let cook undisturbed for about 2 minutes, until the outer edges are brown.
Step 10
Flip, season, and place a slice of Dairy free cheese on the burger. Cook until the cheese droops, about 1 more minute for medium rare. Remove from the skillet.
Step 11
Serve with a soft warm bun and toppings.
