Instructions

Step 1
Combine shortbread ingredients. Press into a pan approximately 1/2 inch - 3/4 inch thickness. Bake @ 350 degrees for 15 minutes or until edges are golden and shortbread is thumpable, without changing shape.

Let shortbread cool. While shortbread is cooling make custard. Combine all ingredients in a mixing bowl sans Rhubarb.

Place rhubarb on top of the cooled shortbread. Then pour the custard mix over the rhubarb.
Step 4
Bake for 30 minutes or until the custard has thickened And doesn’t jiggle.
