Step 1
First, preheat the oven to 200°C. In a large bowl, beat the butter with both sugars until smooth. It takes about 3-4 minutes. Then add the rum, coffee and mascarpone and continue beating for another 5 minutes. The batter should be nicely whipped and noticeably lighter. Finally, whisk in the whole egg.
Step 2
In an additional bowl, mix all the dry ingredients and then gradually add the dry ingredients to the wet ingredients. Don't do everything at once, but really at least two or three times. Work the dry ingredients in lightly so you don't overwork the cookie dough. Once you have combined the dry and wet ingredients, add the chopped chocolate and just use a spatula to gently fold it into the dough.
Step 3
Scoop the dough into 12 equal balls and spread them out on a baking sheet lined with parchment paper. Leave enough spacing between each ball, the cookies are quite big, so don't let them run into each other. Bake for 10 minutes or until cookies are nicely spread and lightly golden. Once baked, transfer them immediately to a cooling rack, but work really carefully. The cookies are very fragile while still warm. Leave them on the rack until they're completely cool and then just enjoy!
