Step 1
Place a strainer over a large bowl then a Muslin or cheese cloth over that and drain 1 litre of kefir. Cover it over and let it sit about 30 minutes to let the whey drip out . Save this whey and you can mix it in smoothies as there are loads of probiotics in there

Once the whey stops dripping gently tie A knot or use an elastic band or twine and make kind of a bag . Squeeze gently then tie this to a cupboard or over your sink. Essential it will hang there and it’s own weight will cause the rest of the whey to drip down. Place a bowl under to collect this whey for later use . I hung mine for 5 hours but you can leave overnight for a drier cheese . After 5 hours I used a whisk to fluff up the cheese and I put it in a clean container . Keep it in the fridge and use within 5 days
