Instructions

Step 1
Preheat oven to 150°c / gas mark 2
Step 2
Finely chop the stem ginger. Sift the flour, ground ginger, cinnamon, cloves and nutmeg into a large bowl. Stir in the chopped stem ginger and sugar.
Step 3
Put the butter and the syrup into a saucepan and heat gently until melted. Bring to the boil, then pour into the flour mixture, stirring all the time. Beat the mixture until its cool.
Step 4
Add the chocolate chips and mix. Press the mixture into a 30 x 20cm / 12 x 8 inch rectangular baking tin.
Step 5
Put into the oven and bake for 30 minutes, check after 20 to make sure its not browning too fast. Cut into fingers or squares, then leave to cool in the tin.
Step 6
Good for up to 5 days. Pop in the microwave for 20 seconds to soften up if needed.
