Ingredients

1 cupgrained rice
medium, or short
1.5 litresmilk
cream
icing sugar to add for whipping if desired

marshmallows
Instructions
Step 1
Add all rice and milk to a double boiler pot or slow cooker.
Step 2
Put on medium or low heat for double boiler, or high heat for slow cooker.
Step 3
Stir ~ every 10 minutes while it cooks. Can take up to a few hours.
Step 4
Once rice is cooked through, and milk has almost thickened, add sugar (amount as desired) and mix.
Step 5
Remove from heat.
Step 6
Separate 2 yolks from the egg whites. Add yolks to rice mixture while it is still warm and mix quickly with rice to prevent it fromcooking in lumps. The residual heat in the rice should cook the yolks.
Step 7
Wait for rice to cool down. Chop marshmallows in half.
Step 8
Whip egg whites until stiff. Fold gently into rice mix.
Step 9
Whip cream until thickened (doesn’t need to be whole bottle, maybe ½-2/3 of small bottle). Fold gently into rice mix.
Step 10
Add marshmallows to rice mix and fold gently.
Step 11
Pudding can be served topped with grated chocolate as a garnish if desired.
