Instructions
Step 1
1. In a tall pot add blueberries and sugar. Smash by hand to release juices or use an immersion blender for a smoother jam.

2. Cook on high heat until rolling boil.
Step 3
3. Mix pectin with small amount of sugar to avoid clumping. While whisking slowly sprinkle pectin into boiling blueberries.

4. While constantly stirring with a rubber spatula making sure to scrape down the sides and bottom of pot to avoid burning continue to cook to 215-220 degree.

5. Add balsamic.

6. Remove from heat and pour into heat proof container. Cover and allow to cool.
