Step 1
• Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat. • Prepare the apples: Wash and dry the apples. Cut the top off each apple, then use a melon baller or a small sharp knife to carefully hollow out the apples, leaving a 1/4-inch-thick wall. Be sure not to puncture the bottom of the apples. Discard the seeds and core. Set the hollowed apples aside. • Make the apple pie filling: Chop the scooped-out apple flesh, removing any remaining seeds or tough bits. In a medium saucepan, combine the chopped apples, granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and allspice. Cook over medium heat, stirring occasionally, until the apples are tender and the liquid has thickened, about 10 minutes. Remove from heat and let cool slightly. • Prepare the lattice pie crust: Roll out the pre-made pie crust or homemade pie dough on a lightly floured surface to a thickness of about 1/8-inch. Use a sharp knife or a pizza cutter to cut the dough into 1/4-inch-wide strips. • Assemble the stuffed apples: Spoon the apple pie filling into the hollowed-out apples, filling them to the top. Weave the pie crust strips over the top of each apple to create a lattice pattern. Trim any excess dough around the edges. • Bake the stuffed apples: Place the stuffed apples on the prepared baking sheet. Bake for 25-30 minutes, or until the apples are tender and the lattice crust is golden brown. If the crust starts to brown too quickly, tent the apples with aluminum foil. • Serve warm, with a scoop of vanilla ice cream or a drizzle of caramel sauce if desired.
