Although consumed less and less these days, bitter foods play a crucial role in our diets. Bitter greens are much more nutritious than non-bitter greens. They are incredibly detoxifying and act as a wonderfully stimulating digestive tonic.

Instructions

Step 1
Chop the radicchio, endive, frisee or watercress, and dandelion greens into bite-size pieces, then wash and spin dry them.
Step 2
In a large bowl, toss all the greens with the fennel strips and the julienned pear or apple. Add the parsley, dill, tarragon, and mint. Stir in the hemp seeds followed by the olive oil, lemon juice, and salt. Toss the mixture well, then divide the salad between four serving plates. (Gut-Omit pear and apple).
