Instructions
Step 1
Preheat the oven to 220°C.
Step 2
Stab the potatoes all over with a fork. Roll the potatoes in 2 tsp of olive oil. Generously sprinkle salt all over and bake for 35 minutes, rotating every 10 minutes. Set aside after cooking.
Step 3
Heat 1 tsp of olive oil over medium heat in a saucepan. Saute the carrots for 5-8 minutes. Then add in the seafood mix.
Step 4
Cook the mix for 5 minutes, then add in the peas and the cream. Season the mix with salt and pepper and then add the dill and thyme. Continue to cook on medium heat for 5 minutes.
Step 5
Quarter the jacket potatoes and fluff the inside with a fork. Add the butter to the potatoes.
Step 6
Place the potato in a bowl and pour the chowder mix on top and serve.
