Instructions

In a medium mixing bowl, whisk together almond flour, coconut flour, cocoa powder, baking powder, xanthan gum, salt and set aside.
Step 3
In the bowl of a stand mixer or using a hand mixer on high speed, beat together melted coconut oil and granulated sweetener until light and fluffy. It should take around 3 minutes. Add the eggs, vanilla and beat for 1 minute.
Step 4
Slowly add the dry and beat until combined. If using sugar free chocolate chips gently fold them into the dough. Form the dough into a ball and wrap in plastic wrap. Chill in the fridge for at least 1 to 5 hours or overnight.
Step 5
When ready to bake, preheat oven to 350°F. Line a large baking sheet with parchment paper and remove cookie dough from the fridge.
Step 6
Scoop and shape into 1-inch balls and place on prepared baking sheet
Step 7
Bake in preheated oven for 9-10 minutes, or until nearly set.
Step 8
Sprinkle with some flaky salt if desired.
