Chicken Cacciatore

This recipe is a crock pot version but I make in my instant pot for a quick meal. I cook in instant pot for 35 minutes and let naturally decompress. I use 2 bell peppers instead of 1. And I choose to serve it with whole grain brown rice :)

Instructions

Step 1
Pour 1/2 cup of the diced tomatoes in the bottom of a 5-6 quart slow cooker. Add the remaining ingredients in this order: chicken breasts, onion, bell pepper, garlic, black pepper, salt, remaining diced tomatoes, balsamic vinegar, basil, oregano, and red pepper flakes. Cover and cook on high 4-5 hours or low 6-7 hours or in the Instant Pot for 35 minutes, and let naturally depressurize.
Step 2
If desired, serve chicken over a bed of whole wheat spaghetti, brown rice, or quinoa.
Step 3
Sprinkle parmesan cheese on top of chicken before serving.
