Spinach Egg Bites (Instant Pot)

The spinach will make these egg bites green. Every time I make them I think of Dr Seuss's "Green Eggs & Ham". One of these days I might add some diced ham after I pour the batter into the molds :-)

Step 1

Blend all ingredients in Blender

Step 2

Spray Egg Bite mold with cooking spray

Step 3

Fill Egg Bite molds 3/4 full

Step 4

Add 1.5 cups of water to bottom of Instant Pot - the place wire carrier with egg bite molds (2 molds stacked) into the Instant Pot

Step 5

Set instant pot to steam setting for 10 minutes

Step 6

Release steam for 5-10 minutes
