Instructions
Step 1
In a large bowl, mix together flour, baking soda, baking powder, salt, nutmeg, cloves, ginger. Set aside.
Step 2
In another large bowl, beat sunflower oil and sugar together for two minutes.
Step 3
To the oil/sugar mixture, add the molasses and almond milk. Continue to mix for 1 minute.
Step 4
Add the dry ingredients, about 1/3 at a time, until a stuff dough is formed.
Step 5
Shape the dough into a disk, seal in a Tupperware, and let rest for 2 hours or overnight.
Step 6
Preheat oven to 180C.
Step 7
Using about 1/2 tablespoon of dough, roll into balls of about equal size and flatten slightly. Place onto the baking sheet spaced 2 inches apart.
Step 8
Cook for 10-12 minutes.
