Lotus biscoff lover, here is a Treat for you. As you noticed , I am obsessed with cheesecake & Biscoff spread. Why not bring them together? A creamy cheesecake , with lotus & digestive biscuits base, yummy lotus spread in filling, melted spread on top & finish off with crumbs. All in all utterly scrumptious.

500gMascarpone cheese
500gCream cheese
400mlDouble cream
350mlCondensed milk
300gpowdered sugar
200gBiscoff spread
2 TbspGelatine
4 TbspWater
for gelatine

Base
Step 1
Blitz digestive and biscoff biscuits in food processor until fine crumbs.
Step 2
Add melted butter in crumbs and mix well.
Step 3
Add in tins and press firmly into it.
Step 4
Refrigerate for 20 minute.
Filling
Step 5
Add room temperature Cream Cheese and mascarpone cheese in a bowl and by using mixer, whisk until smooth.

Add condensed milk & mix.
Step 7
Add Lotus biscoff spread and mix.
Step 8
In a bowl, Add cold cream & beat until stiff peaks.
Step 9
Add in cream cheese mixture and fold with spatula.
Step 10
Bloom the gelatine. Add water in gelatin and let it bloom for 5 minute. Then microwave it for 20 seconds.
Step 11
Temper the gelatine adding one scoop of batter in gelatin bowl, then pour all in cream chestnuts mixture. Give it a last mix.
Step 12
Pour and spread the mixture evenly in cake tins.
Step 13
Refrigerate for 6 to 7 hours or overnight works better.
Topping
Step 14
Add biscoff spread in microwave safe bowl and melt the spread until pouring consistency.

Pour over cheesecake (once cheesecake fully set). Spread evenly.

Put in freezer for another half & hour.
Step 17
Take out of the pans , and top with cookie crumbs and cookies and Serve.
