Make Your Cheesecake Mix
Step 1
Add your cream cheese, double cream, caster sugar and lotus spread into a bowl and beat until smooth and creamy
Step 2
Crush your Biscoff biscuits until a coarse crumb has formed and fold into your cheesecake mix by hand
Step 3
Transfer your cheesecake mix to a piping bag
Assembling Your Cheesecake Bites
Step 4
Grab an ice-cube tray and pipe your Biscoff spread into the bottom
Step 5
Top with your Biscoff cheesecake mix and insert a popsicle stick or flake
Step 6
Freeze for 1-2 hours or until solid
Step 7
Melt your gold chocolate and remove the bites from your ice-cube tray
Step 8
Dip your bites into the chocolate, allowing the chocolate to set before placing on some grease proof paper
Step 9
Place in the fridge for 2-3 hours to allow cheesecake to defrost and the chocolate to harden
