A seasonal way to sneak vegetables to your kids. Rudolph’s Roasted Reindeer Food is made from ingredients that deer in the wild love. Use magic (multicolored) vegetables with designs cut into them to encourage (trick) your kids into eating their veggies.

Step 1
Set oven to 400 f.

Peal and cut the carrots and sweet potatoes into disks.

Cut the sweet potatoes into hooves by cutting a triangle into the sweet potato so it looks like Pac-Man. (You can cut other shapes if you like such as stars and hearts)

Put the carrots and sweet potatoes into a medium sized bowl and add 2 tbs of olive oil and a pinch of salt. Toss ingredients until all the veggies are coated/glossy (use more oil if needed)

Spread veggies out on a baking tray and place in the oven for 30 min.

Take 1 cup of pecans and place them in a gallon sized ziplock bag. Use a rolling pin or hammer to crush the pecans.

Cut the red apple into small bite sized pieces (about the size you would cut for a toddler).

Put apple bits and pecans into a small mixing bowl. Add 1/2 tbs of olive oil into the bowl and toss the contents until glossy (add more oil if necessary). Then add the tbs of brown sugar and toss contents until covered in brown sugar.

Spread the contents of the bowl onto a baking sheet. Wait till the timer goes off. DO NOT TURN OFF THE OVEN. Once the timer goes off place the second baking tray above the first tray and use a spatula to move the vegetables around a bit. When finished set a timer for 10 minutes. Be sure to keep an eye on the second pan to ensure pecans don’t burn.

Once the timer has gone off remove the sheets from the oven and place the ingredients into a medium sized bowl (you can reuse the original Bowl if you’d like). Toss the contents of the bowl till all the ingredients are mixed.

Once the ingredients are mixed take the 1/4 Tsp of nutmeg and LIGHTLY sprinkle it over the ingredients. Mix/toss the ingredients vigorously till nutmeg has coated everything.
Step 12
Place Reindeer food in a serving dish and serve.
