I developed this recipe for a Harry Potter-themed birthday party. This recipe doesn't require using an oven. During the class, kids learn how to whip and pipe cream using a pastry bag. Each hat hides fresh fruit colored according to the Hogwarts Houses: raspberries for Gryffindor, kiwi for Slytherin, blueberries for Ravenclaw, and mango for Hufflepuff.

Step 1
In a bowl, bring the almond paste to room temperature.
Step 2
In a microwave oven, melt chocolate (on HIGH for 1 min).
Step 3
Combine almond paste and melted chocolate.
Step 4
Add salt, coconut flakes, and feuilletine (wafer crumbs) and mix well with a spatula.
Step 5
Divide the mixture into portions 32-35 g each.
Step 6
Line the baking sheet with a silicone mat or parchment paper.
Step 7
To make a hat brim, place a round cookie cutter (3.5” D) on the mat and spread and press 1 portion of the mixture evenly, filling the cookie cutter’s space. Twist and lift the cookie cutter and repeat for the rest of portions. Refrigirate for 1 hour to harden the cookies.

In a bowl, combine cold mascarpone, powdered sugar, cocoa powder, vanilla, and heavy whipping cream and whip until thick.
Step 9
Fill a piping bag with chocolate icing. Pipe a small amount of icing in the center of the cookie. Add fresh fruit to create a cone center. Pipe more icing covering the fruit and making the cone of the hat.
Step 10
Use a spatula to finish shaping the hat.
Step 11
Use chocolate pearls to decorate the hat. (optional)
