Step 1
Roll out your puff pastry and if your pastry is thin fold it over and roll it together to make it thicker . I used two sheets of thin puff pastry for this recipe . Use a knife to cut into 15 long strips of pastry then bake on the oven at 200 c 392 f fan setting until golden about 15 minutes . Once cooked take out and let it cool
Step 2
In a bowl add Greek yogurt mascarpone 2-3 heaped tablespoons of honey ( if you like it sweet add more honey ) the zest of a lemon and juice of half and lemon extract . Use a whisk or electric mixer to beat until fluffy

Step 3
Line a loaf pan with plastic wrap then spread a layer of cream and add a layer of pastry . I Trimmed the ends of my pastry and set them aside to decorate the cake later . Once all the layers of pastry and cream are done fold over the plastic wrap put something heavy on top to weigh down the cake and put it in the fridge until set . Mine was set after 3 hours but just check . Then take it out and sprinkle the crumbled pastry bits all over the cake and enjoy
