Step 1
Preheat oven to 350 degrees (325 degrees if using dark pans), and lightly butter and flour two 9 inch cake pans

Cream the butter and sugar until light and fluffy.

Sift the flour, baking soda, baking powder, and salt. Add to the butter and sugar mixture in batches until blended. (Don't worry if it gets clumpy.)
Step 4
Add the pineapple and lemon juice. Use a spoon to blend well. Be sure not to overwork the batter.
Step 5
In a separate bowl, beat the egg whites until stiff.

Gently fold the egg whites into the batter.
Step 7
Spoon batter into the pans and bake 25-30 minutes, or until a toothpick inserted into the center comes out clean. Decrease time to about 20 minutes if using dark pans.
Step 8
Remove from oven and allow cakes to cool in the pans on a rack. Once cool, frost in your chosen frosting. Recommend using a cream cheese frosting.
