Instructions
Step 1
Use a food brush to clean mushrooms. Then use a damp paper towel to continue cleaning mushrooms
Step 2
Cut off stems, do not discard stems. Will use for stuffing
Step 3
Finely chop mushroom stems and sauté in a pan with olive oil for a few minutes until cooked.
Step 4
Preheat oven 400 degrees. In a bowl, add cooked stems with whatever oil is in the pan, add parsley, crushed garlic, breadcrumbs and graduated cheese (pecorino or parmigiano) Mix together.
Step 5
Chop peeled tomato (optional) mix very well into breadcrumb mixture.

taste and add salt if needed
Step 7
Add a couple of tablespoons olive oil to breadcrumb mixture, to make wet. Add more as needed.

Mix the mixture

Line a cooking sheet with parchment paper and fill mushrooms with stuffing. Drizzle olive oil abundantly on top of each individual mushroom.
Step 10
Bake mushrooms at 400 degrees for 20-25 minutes until tender.
